I found a track in Ride. It started in Sattel, which is good reachable by train. Then you can take up the cable car, or ride up.
From Mostelberg it goes first to Haggenegg, then up to the ridge to Samstageren. And from there down the Chlösterli-Trail to Einsiedeln.

Then to Etzel and the Etzel Trail down to Pfäffikon.

That was a great, fun ride.
